Delicate production process for making the best Italian base

We use a special production process to create a continuous dough sheet. It starts with a low stress dough feeding system after which we use a multi roller and gauging station to gently extrude and reduce the dough. A proofing chamber gives the dough enough resting time for further development. After this, the dough is only a few steps away from becoming the best Italian base.

After the proofing chamber, the dough is ready for the cutting station. Italian pizza bases can be cut in a wide range of sizes and types.

Our standard dimensions are:

  • 11 cm (4 inch)
  • 25 cm (10 inch)
  • 30 cm (12 inch)
  • 35 cm (14 inch)
  • rectangular (e.g. 28 x 40 or 28 x 48 cm / 11 x 19 inch and 11 x 16 inch)

We are always willing to invest in other dimensions, based on the demand of our customer base.

Sauced, docked or pure

When the dough is cut, the crusts can potentially be provided with tomato sauce, with oil or can be docked. Then the dough is lined up for the final step: the stone-bake oven. We can regulate the stone-bake oven to adjust the pizza base from par-baked to fully baked. The result is the typical Italian pizza base with its stone-baked crispy crust and traditional artisanal look.

  • With sauce
    Pre-baked Italian pizza base already garnished with a tasty Mediterranean tomato sauce.
  • Docked
    Pre-baked Italian pizza base without sauce and without oil. Ideal for individual topping.
  • With oil: Pizza pure
    Pre-baked Italian pizza base with a rustic, authentic  Italian look without tomato sauce.

Stone baked pizza crust rectangular: sauced, docked or Pure

This is an ideal pizza base product for the hospitality industry and for food service companies.  Pre-baked, easy to top and ensuring fast supply during peak hours with a relative good margin. Our rectangular pizza crusts are available in sizes 28x48 cm and 28x40 cm  (11 x 19 inch and 11 x 16 inch), with or without sauce, in thin and deep dish and in white flour and whole meal.
